What Kind of Cabernet Drinker Are You?
The Napa Valley cabernet is one of the most coveted grapes and wine in the world. However, I fear that it could become like chardonnay.
Follow me for a moment. The argument here is about “style” or “terrior”. The responses from some winemakers is that I make the wine to please some raters and the masses. If I make it the right way, they will not buy as much. The wines are starting to all taste the same and you can’t tell where they are from. The more the movement is in this direction, the more cabernet will become like chardonnay’s story of oak and butter. What is sad is that restaurants have fallen prone to keep the popular wines on their list, but not necessarily the better made.
The winemakers who are working with the terrior are developing bottles that will become jewels. They bring something different each year that will show off their property for what it is. One winemaker stated that they have moved up harvest to get fruit that is not over matured or over extracted which is what you have above.
